Potato Fondant (Pommes fondant)

INGREDIENTS:
3-1/2 cups cooked potatoes, mashed 3 tbls. butter 1-1/2 tsp salt
dash of pepper 1/4 tsp parsley, chopped 2/3 cup milk, hot
1/2 cup sweet cream 3/4 cup bread crumbs
1 Mix mashed potatoes, while still hot, with butter, salt, pepper, parsley and hot milk. Beat thoroughly for 3 minutes. Turn into a buttered baking dish. pour cream over mixture and sprinkle with bread crumbs. Bake in hot (425 F) oven until crumbs are well browned.
